Chicken and Rice: A One Pot Wonder

But which version of this meal prep staple is the best?


Picture this, you just got back from the gym. You're sweaty, you're famished, and your body aches in parts you didn't even know it could. You open your fridge looking for a feast, only to find another meal prep container of dry rice and plain white chicken. I mean first of all, seasonings are not that expensive.

As a five-foot-seven, one-hundred-ninety pound college student who struggles to get up the stairs and spends WAY too much money on Doordash, I'm here to tell you there is a solution. Its closer than you think and it starts with the reinvention of a gym-bro classic -- chicken and rice.

Chicken Biryani: A Feast for the Senses

Chicken Biryani is a labor of love, but the reward is truly extraordinary. Begin by marinating the chicken. Use a mix of thick yogurt, a generous amount of ginger-garlic paste, a blend of garam masala, turmeric, red chili powder, and a dash of salt. Let the chicken marinate for at least a few hours, preferably overnight, to let the flavors deepen.

The type of rice, too is critical. Basmati is preferred for its fragrance and long grains. Rinse the rice until the water runs clear, then soak it for about 30 minutes. In a large pot, boil water with whole spices - cardamom, cloves, cinnamon, and bay leaves - and a touch of salt. Add the rice and cook it till it's about 70% done.

In a separate, heavy-bottomed pot, layer the marinated chicken, spreading it evenly. Then layer the partially cooked rice over the chicken. Top it with fried onions, fresh mint, coriander, and saffron soaked in milk for a rich color and aroma. Seal the pot with a tight lid or dough to trap the steam. Chicken Biryani is a tapestry of complex flavours that come together to make, in my totally unbiased opinion, the BEST rendition of chicken and rice ever. It combines heat with a variety of flavours to great a perfectly satisfying blend.

Arroz con Pollo: Comfort in a Pot

Arroz con Pollo, a celebrated dish in Latin American cuisine, is both comforting and rich in flavor. Start by marinating the chicken pieces in a mix of lime juice, finely minced garlic, cumin, and paprika, along with a pinch of salt and pepper. This not only makes the chicken more tender but also infuses it with a plethora of robust flavors

In a large skillet or pan, brown the marinated chicken in olive oil until it develops a nice golden crust, then set it aside. In the same vessel, sauté diced onions, green bell peppers, and minced garlic until they're soft and fragrant. Stir in uncooked long-grain rice, ensuring that each grain is coated with the oil and vegetables. This step is crucial for imbuing the rice with flavours.

Add chicken broth, diced tomatoes, and a pinch of saffron or turmeric for a beautiful yellow hue. Nestle the browned chicken pieces into the rice mixture. Cover the pot and let it simmer on low heat. Jollof Rice: A West African Delight

Jollof Rice is a cornerstone of West African cuisine, and much like its Indian cousin, the process is paramount. Start with a base of finely chopped onions, bell peppers, and tomatoes, sautéed until they break down into a rich, fragrant sauce. Stir in a generous amount of tomato paste and a blend of ground spices including thyme, curry powder, white pepper, and a dash of cayenne for heat.

Long-grain parboiled rice is the preferred variety as it holds its shape and absorbs flavors well. Rinse the rice under cold water and add it to the tomato mixture, stirring well to ensure each grain is coated. This step is crucial for infusing the rice with the rich tomato flavors.

Pour in chicken stock, which adds depth and richness to the dish. Bring the mixture to a boil, then reduce the heat, cover, and simmer. The key to perfect Jollof Rice is patience; it should cook slowly, allowing the rice to absorb all the liquid and flavors. Halfway through, you can stir the rice gently to ensure even cooking. So there you have it, three spice up your life. In all honesty, it doesn't even matter which recipe you pick, as long as its made with love. Chicken and Rice reminds me of home, and it should do the same to you. It should be complex, robust, hearty, simple, comforting. It should be uniquely YOU.
